Creamy Tomato Soup with Fresh Spinach.
Skinny Soup: Onion - Cabbage Soup
Ingredients
Garlic Cloves - 5
Onions - 5
Either: 2 GreenBell Peppers or 1 Pkg. Diced Frozen Peppers
Tomato - 1 or 2 cans
Celery bunch including Leaves
White Cabbage - ½ Head of White Cabbage
Lipton Onion Soup Mix - 1 pkg.
Season with Salt, Pepper, Garlic, Parsley, etc.
Directions
Cut Vegetables into small to medium pieces, add mix & cover with water.
Boil for 10 minutes.
Reduce flame to a simmer & cook until vegetables are tender.
Onion-Mushroom Soup
Ingredients
Onions - sliced
Mushrooms - diced
Stock - 1 can either Mushroom, Chicken or Vegetable stock
Leeks - chopped
Shallots - chopped
Splenda - 2 pkg
Season with Salt, Pepper, Garlic, Parsley
Directions
Simmer in a covered pan: onions, leeks, and shallots for 10-15 minutes.
Add Splenda and cook uncovered until onion mixture is golden x 10 minutes.
Add mushrooms and cook x 5 minutes.
Add stock and heat to boiling. Reduce heat, simmer, uncovered, x15 minutes.
Season with Salt, Pepper, Garlic, Parsley
Creamy Tomato Soup with Fresh Spinach
Ingredients
Onion - chopped, 1
Plum tomatoes - 2 pounds
Basil - fresh, minced, 2 tbsp
Vegetable broth - 2 cups
Spinach - fresh, chopped, 1 cup
Salt & Pepper
Parmesan cheese - grated, 1 tbsp
Directions
In large lightly greased pan, saute onions x 5 minutes.
Stir in tomatoes and basil. Cook until tomatoes are tender, about 5 minutes.
Purée mixture in blender until smooth, return to pot.
Add broth, bring to boil.
Add spinach and cook until gently wilted (~ 1 minute).
Season with salt and pepper per taste.
Sprinkle Parmesan cheese over served soup.
